Ingredients:
1 cup white vinegar
1 tbsp. sugar
1 tsp. salt
1 tsp black peppercorns
1 tbsp. water
500g of finely sliced zucchini
1 finely sliced onion
1 finely sliced clove of garlic
Method:
Bring vinegar, sugar, salt, pepper and water to boil in a larger pot.
Add zucchini and onion and boil for 1 minute.
Divide zucchini, onion and pickling liquid among sterilised jars.
Divide garlic among the jars, place lids on allow to sit for at least 24 hours (if you can!)
